Isabella loves helping me make them (although she doesn't understand why we can't eat them right away). As for the rest of the family, we have no trouble eating them up! I love it because it is a sweet treat without any added sugar or bad stuff!&lt;br /&gt;&lt;br /&gt;Prep time: 10 mins&lt;br /&gt;Total time: 6 hours&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;2-3 cups fresh strawberries&lt;br /&gt;1 1/2 cup organic vanilla yogurt&lt;br /&gt;&lt;br /&gt;Chop and blend/puree strawberries. Pour into a mixing bowl. Stir in vanilla yogurt until well blended. Pour into Popsicle molds. Should make at least 6 Popsicles. Using a pastry knife, fork, or food processor, cut butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious. Set aside. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;In a separate bowl, whisk together pumpkin, half and half, and egg. Fold wet ingredients into dry ingredients. Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours.&lt;br /&gt;Preheat oven to 375 degrees F.&lt;br /&gt;Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill. Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time. Make sure to remove the excess moisture from the canned pineapple of the muffins will be gummy.&lt;br /&gt;&lt;br /&gt;2 ¼ cups all-purpose flour ( you can use half wheat flour to make it a little healthier)&lt;br /&gt;2 teaspoons baking soda&lt;br /&gt;1 teaspoon cinnamon&lt;br /&gt;½ teaspoon salt&lt;br /&gt;1 ¼ cup sugar&lt;br /&gt;3 large eggs&lt;br /&gt;8 tablespoons (1 stick) unsalted butter, melted and cooled&lt;br /&gt;1 teaspoon vanilla extract&lt;br /&gt;4 carrots, peeled and grated (2 cups)&lt;br /&gt;1 (8 oz.) can crushed pineapple, drained and pressed dry w/ paper towels&lt;br /&gt;½ cup sweetened coconut&lt;br /&gt;½ cup raisins&lt;br /&gt;½ cup walnuts or pecans&lt;br /&gt;&lt;br /&gt;1.  Adjust an oven rack to the middle position and heat the oven to 375 degrees.  Generously coat   a 12 cup muffin tin with vegetable oil spray.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Arial;color:#3333ff;"&gt;&lt;/span&gt;&lt;span style="font-family:arial;color:#3333ff;"&gt;&lt;br /&gt;2.  Whisk the flour, baking soda, cinnamon, and salt together in a large bowl.  In a separate bowl, whisk the sugar, eggs, melted butter, and vanilla until smooth.  Gently fold the egg mixture into the flour mixture with a rubber spatula until just combined.  Fold the carrots, pineapple, coconut, raisins, and walnuts into the batter.&lt;br /&gt;&lt;br /&gt;3.  Use a large ice cream scoop or measuring cup to pour into muffin tin.  Bake until golden and a toothpick inserted into the center of muffin comes out with just a few crumbs attached, 25-30 minutes.&lt;br /&gt;&lt;br /&gt;4.
